baked aubergines
Instructions: prepare the aubergines with a squeeze, a cut and a drizzle of olive oil, oven roast them for 20 mins at 200C. meanwhile saute a finely chopped onion in olive oil and add minced beef or lamb, add salt pepper and tomatoes. prepare the canned tomatoes with some onions. fill the aubergines with the meat and lay them over the tomato sauce, another drizzle of olive oil and fresh parmesan cheese. back into the oven for another 15 minutes, here we go, happy boatcooking!
