directions: saute a chopped onion and 3 cloves of garlic in olive oil and add a cup of canned tomatoes. add vegetable stock and finely sliced vegetables of your choice, as for example potatoes, carrots, zucchini, peas etc. finish off with salt, pepper and fresh thyme, cook until vegetables are done but still have a bite. you can go for short pasta instead of the potatoes. keep in mind to start with those vegetables which need longer time to cook. happy and healthy boatcooking!
