Fry cubes of 1 aubergine in olive oil until golden brown then add 1 chopped onion such as 3 cloves of finely chopped garlic. Leave over medium heat for a few minutes then add a tbsp of tomato puree and one small can of tomatoes. add a good pinch of salt and half a tsp of sugar, and let simmer for ca 20 minutes. Serve cold as a starter to share along with some pita bread, garnish with fresh parsley if you wish.
