story: Peperonata is a classic from Italy´s long list of antipasti. It also works perfectly as a side dish to
grilled meat.
Ingredients for 4 persons:
- 4 red peppers
- 4 yellow peppers
- a few basil leaves
directions:
- roast the peppers for 20 minutes on each side at 200°C
- put the peppers into plastic bags
- close the bags and let the peppers cool down
- peel the peppers and remove the seeds
- put the peppers into a deep plate forming several layers
- generously sprinkle every layer with olive oil
- add salt and garlic to every layer
- serve with basil and a final dash of olive oil
tips:
- serve with white bread or as a side dish
- if you like garlic, be generous with it
