Chili Beef

Fry 500g of minced beef in a hot pan for 5–7 minutes until crisp and season with salt and pepper. Drain the crisped mince in a sieve – this will help it stay crispy. Set aside. Wipe out the pan and add a tablespoon of oil, garlic, ginger and chilli. Fry with a pinch of salt and sugar for 2 minutes. Add the drained mince and stir to mix. Add some sauce and heat through, stir in the juice of a lime then add spring onions, stirring for 30 seconds. Make a dressing by mixin a tbsp of vegetable oil, a tbsp of soy sauce, the juise of a lime, chili and coriander. To serve, spoon some of the mince mixture into lettuce leaves, drizzle with a little dressing and serve.
