Entrecôte aux cretons

Bring the *entrecote* to room temperature, remove some of the fat, and cut it into little chunks. Roast the fat in a hot pan and remove when crispy, salt the meat generously and sear the steak in its öwn fat on both sides, we recommend medium rear. Slice the steak and serve with the crispy croutons.
