Gnocchi Veloci 

Make a dough by mixing 500g of Ricotta or curd cheese, 250g of spelt flour, 2 eggs and some salt. Form a string and cut the gnocchi, boil untill the gnocchi float on top of the water. Toss the gnocchi in a light tomato sauce or almost any other sauce of your preference.
