story: Kritharaki is a type of short pasta very popular in Greece. Its name is derived from krithari which
stands for barley in English. It is used in many different Greek dishes, in Italy this type of pasta is known
as orzo.
Ingredients for 4 persons:
- 250g of Kritharaki pasta
- 200g of Feta
- ca 1l of vegetable stock
- ca 20 cherry tomatoes
- ca 20 black, seedless olives
directions:
- sauté the Kritharaki in some olive oil
- add the stock and cook over a gentle heat
- sauté tomatoes and olives in a pan
- once the pasta has taken most of the liquid add the feta and stir until creamy
- add salt and pepper
- add tomatoes and olives
tips:
- top with fresh herbs (e.g. basil) or arugula at the end
