story: Penne alla Norma is a typical Sicilian pasta dish named after the opera “Norma”, which was composed by Vincenzo Bellini, born in Catania. The charm of this dish lies in the texture of the eggplant, if you manage to get ricotta salata – go for it!
Ingredients for 4 persons:
- 1 aubergine
- 400g of Penne
- Ca 2 cups of vegetable oil
- Ricotta salata
- pantry basics: olive oil, 1 onion, 2 cans of tomatoes, 1 clove of garlic, sea salt, pepper
directions:
- cut the aubergine into cubes
- salt and let it sweat
- saute the chopped onions in olive oil
- add tomatoes, garlic, salt and pepper and cook for ca 20 minutes
- fry the aubergines in vegetable oil until golden brown
- cook the Penne al dente and add to the tomato sauce
- add the aubergine
- give it a final stir
- grate Ricotta salata over it and serve
tips:
- if you do not manage to buy Ricotta salata substitute it with Parmesan cheese
