Ratatouille 

saute one finely chopped onion in olive oil, slice one red and one green pepper, and a zucchini such as an aubergine and add to the onions saute for another 2 minutes add a small can of peeled tomato then the zucchini, one finely chopped clove of garlic, and some fresh thyme add salt and pepper, saute until done but still has a good bite serve with white bread

 

* tip: great with lamb or any grilled meat
